The French Butcher’s Apprentice

One of the best food experiences I’ve ever had was a two-day workshop on French “seam” butchery at the amazing Woodberry Kitchen restaurant in Baltimore. As it turned out, I got much more than a lesson in butchery. Dominique Chapolard showed us a way of life that doesn’t exist in the U.S.
